Spending a significant amount of time in Melbourne, I feel incredibly lucky to have so many authentic Japanese restaurants right at our doorstep. Even with this abundance, though, we never shy away from a trip to Japan, as many travellers are now experiencing, any excuse will do! But when hopping on a plane isn’t an option, we go out for Japanese instead, letting local flavors spark ideas for the kitchen.
