Monthly Recipe Recap: What I Cooked In May

May always feels like the sweet spot between spring and summer. The days are longer, the weather is warmer, and I find myself looking for any excuse to spend more time outside (for which Koda is grateful). This month was filled with fun new flavors, some wild ideas, and recipes I couldn't wait to share with you.
Behind the scenes, it was a busy one, too! Shooting cookbook photos in New York (!!!), family travel, exciting projects, and everything in between. Even with a packed schedule, getting into the kitchen and building new recipes is one of my favorite parts of each month.
Maybe you’ve been cooking alongside me for a while, or maybe you’re just joining in. Either way, I’m so glad you’re here. I hope this roundup inspires your next meal, helps you discover a new favorite recipe, or simply gives you something delicious to look forward to making. Enjoy all the recipes from May!
Chili Lime Chicken & Rice Skillet
Prep Time: 30 minutes
I love a one-pot meal!!! This one is so simple, actually so filling, and topped with cheesy goodness. I’m starting the list with this one, because it’s great for prep, too! Find the full recipe here.
Grilled Steak & Spring Veggies with Lemon Herb Orzo
Prep Time: 35 minutes
My grill might be my new favorite thing. If you need further proof, just check out last month’s favorites round-up, where it was literally my most talked-about new hobby. I love being able to grill veggies at the same time as I grill my meats, and this meal came together perfectly with a refreshing lemon herb orzo. Find the full recipe here.
Cookie Dough Date Bites
Prep Time: 50 minutes
Dessert is always a good idea, especially when it’s this easy. These treats are coated in chocolate and frozen to perfection, creating a delicious make-ahead dessert you’ll get to enjoy all week. Find the full recipe here.
Smash Burger Tacos
Prep Time: 35 minutes
I had a crazy idea, and it turned out delicious. Don’t knock it until you try it! Find the full recipe here.
Street Corn Pasta Salad
Prep Time: 1 hour 5 minutes
A high-protein pasta salad filled with grilled chicken, sweet corn, a creamy Greek yogurt dressing, and more. Might have been my favorite this month! Find the full recipe here.
Cilantro Lime Chicken with Coconut Rice Mango Salsa
Prep Time: 60 minutes
This one has me feeling sooo ready for summer. Grab yourself a few mangoes and treat yourself to dinner outside! Find the full recipe here.

Sometimes I’m feeling summer, and other times I find myself holding on to cold-weather meals. Enter… this chicken pot pie. I surprise myself with this one, and think you’ll love it, too! Find the full recipe here.
